Hello Monday!!! It’s Make it Monday and today I share with you video on making Bo Kho in an Instant Pot using Nomnom Paleo‘s recipe. I came across this almost 2 weeks ago and have been so excited to make it. The delay was caused by several attempts to find the Madras curry that she had listed in her recipe. I was hoping I would be able to find it in local markets but in the end and after several failed attempts, I resorted to Amazon. It took 5 days to get here and upon arrival and tasting, it tastes just about the same or so close to my Madrecita brand Chicken Bullion seasoning that I stock up like crazy because I love that spice blend so much!
Anyway, in between the homeschool work, we cooked this Bo Kho (aka Vietnamese Beef Stew) just as Nomnom Paleo’s Instant Pot recipe says to. The kids and I did go a little bit out of order in placing the ingredients in the pot, but everything else was the same.
